table_io_waits_summary_by_table テーブルを見ればわかるらしいです。テーブル定義は以下でCOUNT_*をテーブルごとに表示して時間を置いて実行することで確認することができます。

selectなのかupdateなのかをそれぞれ回数で出力する場合は以下です。結構な行数のテストテーブルをselectしたので以下のようになっています。各テーブルごとに複数回実施して差分を確認すればアクセス頻度の多いテーブルを確認することができます。
